Pancakes in Thermomix
My kids are big pancake fans, regardless of whether they are ‘American style’ thick, fluffy and small or ‘crêpes’ – think the type you get on a French ski trips, thin and big. Every year we make loads for pancake day and I like them really thin. I bought my pancake pans years ago in France but now you can buy them off amazon and Lakeland and other baking shops. I like to pour the batter into a hot pan, drain off the excess and you’re left with super thin pancakes – delicious! Now you just have to decide what to top them with!

Try out pancakes with lemon & sugar, Nutella and strawberries or maple syrup and banana – they’re all delicious! You can even make them savoury.

Ingredients
- 500ml milk (full fat preferably)
- 220g plain flour
- 4 eggs
- 2 pinches of salt
Instructions
Put everything in your thermomix and blend, start at speed 4 and increase the speed up to speed 9 for one minute. Scrape down the sides and blend a little bit more
Let the mixture sit for a few minutes
Heat a pancake pan and add some oil – use a piece of kitchen paper and wipe over the pan. Watch my video for how to do this.
Pour in the mixture in to the hot pan, it should sizzle and then pour off whatever hasn’t stuck to the pan – this is how you get them beautifully thin
After a few minutes, turn the pancake to cook the other side

- Cook Time: 2-3 mins per pancake
