Apple, Cinnamon and Pecan Cake - Thermomix recipe

Preheat the oven to 180°C / 160°C Fan.
Line a baking tray to brown the nuts on.
Line a 22cm round spring-form cake tin with greaseproof paper for the cake.
150g unsalted butter
150g light soft brown sugar
100g maple syrup
2 tsp ground cinnamon
1 tsp vanilla extract
1 tbs baking powder
250g plain flour
Place the pecans on baking tray and roast in the oven for 5-10 minutes until lightly toasted.
Tip into the mixing bowl and blitz 2 Seconds / Speed 4 to roughly chop.
Transfer to bowl and set aside.
Core the apples, (you can leave the skin on if you’d like) and chop into chunks – set aside.
Place the butter, light soft brown sugar, maple syrup, cinnamon, vanilla extract, baking powder, eggs and plain flour in the mixing bowl then mix 30 Sec. / Speed 5.
Add the apples and mix 30 Sec. / Reverse / Speed 3.
Pour into the spring form tin and sprinkle the top of the cake with the chopped pecan nuts and some Demerara sugar.
Bake in the oven for 45 minutes until a skewer comes out clean.
Leave to cool for 5 minutes, then remove from the tin and transfer onto a wire cooling rack.
