Sticky toffee pudding Cookidoo recipe, a fantastic dessert to make in your Thermomix. Steamed in your Varoma, a perfect dinner party dessert. 

The batter takes just 20 seconds (plus some time to soak your dates), the toffee sauce 7 minutes and then 30 minutes to steam. So easy! You should try it.

Description

This is a traditional British dessert but once you’ve tried it in your Thermomix, you’ll never buy one in a pub again as these are so much better than in any restaurant!


Ingredients

Units Scale
  • 150 g pitted dates
  • 1 1/2 tsp bicarbonate of soda
  • 180 g water
  • butter, for greasing

Sticky toffee sauce

  • 60 g unsalted butter, cut into pieces
  • 60 g soft brown sugar or 60 g brown sugar
  • 75 g golden syrup or 75 g honey
  • 40 g full cream milk
  • 1/4 tsp natural vanilla extract or 1/2 tsp vanilla sugar, homemade

Sticky toffee puddings

  • 40 g unsalted butter, cut into pieces
  • 110 g dark brown sugar or 110 g brown sugar
  • 150 g plain flour
  • 1/2 tsp baking powder
  • 1 egg
  • 700 g water

 


Instructions

  1. Add dates and bicarbonate of soda to a bowl and set bowl aside, either pour over 180g water you’ve boiled in a kettle or follow the next step to heat it in your Thermomix. You’re going to let the dates soak for 20 minutes.
  2. Place water into mixing bowl and heat 4 min/100°C/speed 1, then pour hot water over dates and bicarbonate of soda; the mixture will bubble up. Set aside and allow dates to soak for 20 minutes. Meanwhile, grease 8 dariole moulds (6 cm deep, 100 ml capacity each, see Tips), arrange moulds into Varoma dish, set Varoma aside.

Sticky toffee sauce

  1. Place butter, soft brown sugar, golden syrup, milk and vanilla extract into mixing bowl and cook 7 min/100°C/speed 2. Transfer into a serving jug and cool for 10 minutes before placing into refrigerating to thicken. Meanwhile, make puddings.

Sticky toffee puddings

  1. Place reserved dates and soaking water, butter, dark brown sugar, flour, baking powder and egg into mixing bowl and mix 20 sec/speed 5, then divide evenly between prepared moulds. Rinse mixing bowl.
  2. Place water into mixing bowl, place Varoma into position, secure Varoma lid and steam 30 min/Varoma/speed 1. Remove Varoma and remove puddings from moulds and serve warm with sticky toffee sauce.

Notes

I make the sticky toffee sauce in advance and just reheat it before serving.
