Description
Healthy snack – great for breakfast
Ingredients
10 pitted Medjool dates
150 g buckwheat
1 carrot 75 g
1 Courgette (approx. 100-130 g)
1 banana 110 g
walnuts 70 g
2 eggs
milk of choice 50 g
2 tsp vanilla bean extract
2 tsp ground cinnamon
50 g coconut oil
1 tsp baking powder
120 g dark chocolate chips (optional but I think these are must!). Noni likes to use dried cranberries instead
Instructions
- Preheat oven to 170°C.
- Place buckwheat into mixing bowl and mill 15 sec/speed 9. Transfer to a bowl and set aside.
- Place pitted dates into mixing bowl and chop 6 sec/speed 7.
- Add carrot and zucchini and chop 2 sec/speed 5.
- Add all remaining ingredients and reserved buckwheat flour and mix 25 sec/reverse/speed 4.
- Pour batter into a lined or greased 12-hole muffin tray and bake for 20 minutes (170°C) or until a wooden skewer comes out clean. Serve muffins warm or allow to cool before serving.
Notes
My kids love these as they just taste of chocolate chips – Noni (who created the recipe)prefers them with dried cranberries
