I accidentally made butter the other day while whipping some cream and I found out that you can actually change it back to cream again.  So I thought I’d test it out.

If you want to WHIP cream in your Thermomix simply use your butterfly whisk and use speed 4 or lower.  Watch it through the top to keep an eye on it so that you stop it at the whipped cream phase.
If you want to make BUTTER let it go past the whipping phase until it separates into butter and buttermilk. If it’s not turning into butter, then cool your cream in the fridge (your cream needs to be cold to make butter) and try again.
If you want to turn butter & buttermilk back into cream, simply heat and stir. I used 3 minutes, 90 degrees, speed 1, then 30 seconds at speed 8 ….and you have cream again.
