Description

Great for canapés, I make mini ones but you can do bigger. I made 63 mini blinis from this recipe


Ingredients

Units Scale
  • 20 grams butter
  • 150g Self raising flour
  • Pinch Salt
  • 1/4 teaspoon bicarbonate of soda
  • 80g milk
  • 180g Sour cream

Instructions

Add butter 1 min /  50 degrees / speed 2 – it should be melted, extend time for a bit longer if it’s not

Add the rest of the ingredients and blend 30 seconds / speed 5

Scrape down the sides of the bowl and add a splash more milk if the batter is too thick

Blend again until you’re happy everything is combined and there are no clumps of flour

Fill a squeezie condiment bottle with your batter. Lightly grease a pancake pan/frying pan and squeeze out circles – don’t try and make a circle shape, just squeeze from the centre and they’ll form circles.
Cook long and slow so the top won’t be runny when you flip them, if you put the heat up too high, you’ll brown the bottom but you’ll lose the shape when you flip.

Top with cream cheese and smoked salmon or with my smoked salmon paté

Notes

When making the rounds, don’t try to make a circle shape, just squeeze from the centre and they’ll form circles. I made 63 mini blinis from this recipe
